Confit Waubra duck leg with orange and pomegranate marmalade, with braised leek and a whipped Dauphinois potato
Fillet of monkfish, wrapped in Istra prosciutto, baked with lemon oil with minted spinach and pea puree, pomme frittes and a watercress and celeriac remoulade
Tuki lamb shoulder braised in honey, butter and spices with local potato skordhalia, roasted local beetroot and carrot with a veal and red wine reduction
Fillet of aged local organic beef cooked to your liking with roasted chestnut puree, sautéed heirloom Swiss chard and a red wine veal reduction
Beetroot ravioli filled with Holy Goat fromage and chard with A la Grecque baby vegetables (Vegetables cooked slowly in white wine saffron, lemon thyme garlic and parsley)
